Kombu (Laminaria digitata) also known as Kelp, is a highly nutritious brown seaweed that has been used as food in many Asian countries for centuries. The potential health benefits of kelp are wide-ranging. It is a natural source of vitamins A, B1, B2, C, D and E, as well as minerals including zinc, iodine, magnesium, iron, potassium, copper and calcium. In fact, it contains the highest natural concentration of calcium of any food, up to 10 times more than milk. The high iodine content of sea kelp has been known to treat thyroid dysfunction and recent studies suggest that the natural fibre alginate found in kelp, acts as a fat blocker stopping the abortion of fat in the gut (i.e. may help aid in weight loss).
Kombu is also known for its anti-aging properties due to the form of iodine contained within in it, as it removes free radicals (the chemicals that accelerate ageing).
Preparation: Dried Kombu can be added to any savoury dish. It can be used to make broth, added to beans to make them more digestible, and eaten in salads.
